Salmon Cakes and Broccoli Slaw


Broccoli Slaw
4 slices bacon
1 bag broccoli slaw
¼ c red onion minced
1 Tbsp bacon fat
1 Tbsp balsamic vinegar
2 Tbsp raw honey
Salt and pepper
Stir together mayonnaise, honey, bacon fat, and vinegar in a large bowl.
Add slaw and onion
Toss gently to coat
Cover and chill 8 hours
Sprinkle with bacon before serving


Salmon Croquettes


1 can of salmon
2 eggs
1 small onion - diced
1/2 bell pepper diced
1/2 cup almond meal
2 Tbsp. coconut flour
1 Tbsp. old bay seasoning


Mix everything in a bowl. Scoop out, form balls then pat into patties. Fry in coconut oil for about 3 minutes per side or until golden brown. Enjoy!
