Savory Chicken Soup
2 chicken breasts
12 oz dry white beans
1 onion, chopped
3 celery stalks, chopped
3 carrots, chopped
1 teaspoon cumin
1 teaspoon basil
1 teaspoon oregano
2 teaspoons salt
1 teaspoon black pepper
Prepare beans by either 1. Cover with water and let sit over night. or 2. Add to pot, cover with water and bring to rapid boil, turn the heat off, cover and let sit for one hour. With either of these options the beans must be drained and rinsed before adding to the soup.
Add chicken breasts to pot and cover with water. Simmer uncovered until the meat is cooked. Remove breasts from broth and debone, cut into bite size pieces. Strain broth through fine sieve. Place onion, celery, carrots, seasonings and white beans in broth and simmer for 1.5 hours, until beans are cooked. If water level drops, add more. Return meat to pot and allow to warm. Then the soup is ready to serve.
